This entire fall seems to be about pumpkins. Today, specifically, about pumpkin muffins with chocolate chips. The fall season is almost over but since the Thanksgiving is still ahead of us, here's a recipe for these delicious beauties. It all started with pumpkin spice latte.

This weekend I found and tried an amazing recipe for an avocado spread. Even though I'm a fan of avocados and I know how healthy they are, I never used them in recipes. Avocados were not very usual to see when I was growing up and I tried them for the very first time only year or two ago. I've liked them ever since but only ate them sliced on a buttered bread. I've been making homemade turnovers for some time now, usually simple triangle shapes, but I wanted to make something special for Valentine's Day this year and made them in the shape of heart. However the problem of this shape are leftovers. So I took the small leftover piece of puff pastry dough, put a little filling inside and closed it on the top. Have I ever mentioned that I hated vegetables when I was little? I really did. From all the different kinds of veggies all I would eat was green pepper, corn, fresh pea, cucumber, carrot, and sometimes lettuce. Of course I hated when my mom wanted me to eat some other type, which wasn't very often, as she didn't like veggies that much either. So each time when she would make for example fried cauliflower for the family she would also make something else for me to eat.

As I promised earlier this week I'm going to share a wonderful recipe with you. Chia pudding is very simple and healthy breakfast option that only takes about 10 minutes to prepare, but you need to make it in the evening and keep in the fridge overnight (or at least for couple hours) for best results.

You'll need:

1 can of coconut milk (usually 13oz) OR any other coconut milk OR regular milk (in which you cook shredded coconut for 10 minutes and strain)
