apple pancakes

Every Sunday Joe and I eat breakfast together. Mostly it's him preparing the meal as I am so NOT-a-morning person. But when a miracle happens and I'm fully awake to be able to cook, I make pancakes. For months I used a very good pancake mix that we once found at Christmas Tree Shop. It was so easy to make and the pancakes, when eaten with maple syrup and berries, were great.

 

Then, of course, I started thinking of something else. I'm not the kind of person who uses ready-to-bake mixes, even though it saves so much time. I like to make things myself. So you can imagine how happy I was when I was reading a cook book I had on my bookshelf for years (!) and found this apple pancakes recipe.

 

I'm not going to lie - it takes more time to make these. It's not just mixing the ready-to-bake mix with an egg, milk, and oil. It's more ingredients, little more work, and little more dishes to wash. But they're much better!

 

These apple pancakes are so good I don't even need maple syrup. I don't need anything, I'll eat them all plain. That's how good they are!

Ingredients:

  • 1 cup (250 ml) of milk

  • 7 oz (200 g) of whole wheat flour

  • 2 oz (60 g) of cane sugar

  • 2 eggs

  • 2-3 apples

  • 1/2 teaspoon of cinnamon

  • 1 tablespoon of baking powder

  • 3 tablespoons of vegetable oil

  • pinch of salt

 

Directions:

 

First step is to mix flour, baking powder, cinnamon, salt, and half of the prepared sugar in a larger mixing bowl. Now take the eggs, put egg whites in another bowl and add egg yolks, oil, shredded apples, and milk into the flour mix. 

Next step is preparing the egg whites. Beat the egg whites with rest of the sugar you have, make sure to keep beating the eggs until stiff peaks form. Then add them to the bowl with rest of the ingredients and mix with spatula. When you're batter's ready, put a little oil on a non-stick pan and bake the pancakes - bake each pancake for approx. 2 minutes on each side.
