4 quick takes: On long summer evenings and lifelong decisions

This summer's been really special. Did you see this post in which I write about us moving back to Europe? That was a big thing for us. But just in case that doesn't seem special enough, we also decided to boost it up a bit and put it together with us getting married!!

Yes, the third Saturday in August was our day! The day was perfect and we really enjoyed it. Actually, I still keep thinking of how special it felt. It was totally different from any wedding experience I had before as a wedding guest. It felt as if I was in this beautiful bubble where no organization challenges or program changes could touch me, I didn't see them and nothing concerned me. I wasn't stressed out, nor was I afraid somethings wasn't gonna be perfect. I was just standing before the altar getting married and it felt beautiful. The best day of our lives!

2. resuming normal life, finally!

Even though Joe found work and started working very shortly after we moved home, I didn't do so. I had so many appointments to go to, so many people to meet and things to organize that I decided to give myself a break. I was traveling constantly between my hometown and the City where we're starting our new life, which is about a 2 our trip one way. Then I had my wedding dress custom made in a town about 30 minutes out of the City, where I had to come multiple times for fittings. In my hometown again I had at least 4 dental appointments during just July, plus Joe and I had dancing lessons there as well. Then around the City, we still had to search for some vendors for the wedding. And the list went on and on and on.

Now you can probably see why I didn't bother starting new job this summer. Even though I must say that I did start looking for it and found it in less than 3 weeks. I just pushed the starting date till September. Just like summer vacation is coming to an end for students it's also coming to an end for me:) New challenges are awaiting!

3. favorite summer recipe

Definitely these Zucchini fritters. Mostly because my parents' garden was super fruitful this season and they had the most giant zucchinis I've ever seen plus they had a lot of them. I updated the recipe a bit, mixing 4 cups shredded zucchini, 1/3 cup sliced scallions, 2 eggs, 2/3 cup all-purpose flour and some salt. I made sure to squeeze out as much liquid as possible from the zucchini and the outcome was even better than before. I served it with just sour cream for dipping and it had a big success, resulting in me having to make it several more times in one month:)

Before we left Boston and moved us back to Europe I made some last minute shopping for books. By now I can say that I made few really good choices for new books with the winner of this summer being The Secret Life of Bees by Sue Monk Kidd.

Do you know that feeling when you've just finished a book but you're sad it doesn't goes on? It happens to me with some good reads that I like the book so much that even though I want to know what happens at the end at the same time I hate it being at the end. This was a book like that. So if you're into good American South stories, or just novels in general, give it a try!
